SIMPLE PAN SEARED SALMON
WITH STEAMED GREENS -
Heat skillet over medium heat and add about 2 tablespoons olive oil and
a large clove of garlic, sliced. Sauté garlic just until it smells fragrant
and starts to turn golden. Remove if you want but I leave it in. Add a bit
more oil if needed, then add about a tablespoon or so of lemon juice. Turn
heat to high. Add salmon and shake pan so fish doesn’t stick. Cook until
golden brown on each side, but don’t overcook. Serve with steamed greens or
simply alone with pan juices, adding a lemon wedge for garnish.
SPEEDY STEAMED GREENS

Leave a bit
of water clinging to chard, spinach or other green leaves after washing. Put
in a big pot and cover. Turn heat on high. Greens will wilt nicely after a
couple of minutes.
Even tastier: Film a pan with olive oil and add a bit of chopped garlic
and red pepper flakes. Add washed greens. Cook, stirring often, until
slightly wilted. Season with sea salt.
TO SERVE:
Make a bed of spinach. Lay salmon on top. Drizzle with pan juices. YUM!
